Ingredients:

  • 4 packs Shirataki noodles
  • 1 tablespoon Olive oil (Extra virgin preferred)
  • 1 to 2 Garlic cloves, minced
  • 2 to 4 slices Bacon or pancetta
  • 1 cup Milk or Soy milk
  • 4 Egg yolks
  • Cheese of your preference (Parmesan cheese preferred)
  • Salt and Pepper 
  • 1 tablespoon Parsley, chopped or dried (*Optional)

Instructions:

  1. In a large pot, prepare a good amount of water to boil Shirataki noodles.
  2. Meanwhile, heat the olive oil in a large pan over low heat, add minced garlic when it’s ready, then add the bacon and cook for a few minutes. Turn off the heat.
  3. In a large bowl, mix milk and egg yolks well. Add cheese and a pinch of salt.
  4. When water starts to boil, cook drained and rinsed Shirataki noodles, bring to a boil.
  5. Drain Shirataki noodles, lightly stir fry it in the large pan with bacon.
  6.  Toss it into the egg mixture and mix quickly but lightly.
  7. Ground pepper before serving.

  • 1 pack Tofu
  • 2 to 4 teaspoons Soysource
  • 2 to 4 teaspoons Sesame Oil

Instructions:

  1. Cut a package of tofu into 4.
  2. Score entire surface of tofu with a knife in a lattice pattern by cutting 1cm-deep, spacing 0.5cm apart.
  3. Put tofu on a plate and pour soy source first, sprinkle chopped spring onion and coat it with sesame oil last.

  • Sesame oil is always the last.

You will need:

  • Cookie cutters (Love heart shaped preferable)

Ingredients:

  • 1 bowl Cooked rice (or 4 rice bowls of rice just enough to make 4 rice balls)
  • 2 sticks Crab sticks
  • 1 slice Ham (chicken, turkey, any ham you like)
  • 4 small sausages
  • 1 sheet Black seaweed paper
  • mayonnaise
  • salt

Instructions:

  1. Make 4 rice balls in rounded triangle shape using plastic wrapping paper. Sprinkle salt, let it cool down.
  2. Gently take off the red layer of crab meat stick and keep it rectangle shaped, don’t tear it. This will be Santa’s hat.
  3. Place a cookie cutter on the edge of ham you prepared. If you are using love shaped cutter, use the top part of the heart shape, a rounded side.
  4. Cut off the sides of cooked wiener sausages. This will be Santa’s nose.
  5. Make Santa’s eyes and mouth by cutting black seaweed paper.
  6. Wrap the red layer of crab meat stick around pointy side of rice balls, glue it with mayonnaise.
  7. Put a bit of mayonnaise to glue ham below Santa’s hat as well.
  8. Place cut sausages on the lower middle of ham.
  9. Place eyes and mouth to finish.

Tips

  • If you don’t have a cookie cutter, just cut a slice of ham into small rectangles.
  • You can add any filling you like when making rice balls. I like tuna mayonnaise for Santa rice balls.
  • When making rice balls, gently squeeze them.

  2. Rinse apples well, remove core using table knife.

  4. Stuff each apple with cinnamon nuts and top with raisin butter.
  5. Place apples in a baking pan, stick cinnamon.
  6. Cover them with melted butter and lemon juice.
  7. Bake 30 to 50 minutes.

  6. Add spring onion.

  • If the seaweed is long, chop them after soaking.
  • Don’t boil seaweed for too long. You can add them just before miso paste.

  • 25 Shrimps
  • 6 tablespoons Olive oil (extra virgin olive oil if possible)

  • 1 Echalote (use onion for substitute)
  • Paprika powder (if you have)

Instructions:

1. How to make Rice Milk with Cooked Rice

  1. Cut off the garlic head crosswise without peeling, place it on a baking sheet covered with foil then drizzle the cut surface with 2 tablespoons of olive oil. Roast at 205ºC / 400°F for 35 minutes. (Don’t peel or divide into the individual cloves as we want to use the whole bulb.)
  2. While baking, finely chop another garlic and echalote or onion.
  3. Remove heads and legs of shrimps, devein shrimp by using a paring knife. Making a slit along the shrimp’s back is important when marinating.
  4. When garlic is ready, squash it out into a bowl and make a garlic paste.
  5. In a large pan, heat 2 tablespoons of olive oil and half butter over low heat, stir fry finely chopped garlic and echalote until slightly golden.
  6. Add the rest of olive oil and butter, lightly stir then add wine, paprika powder, roasted garlic paste, and 1/2 lemon.
  7. Sprinkle salt and pepper to taste.
  8. Put shrimps in then cook for 3 minutes over medium heat. When it’s cooked, turn it higher for 10 seconds.
  9. Quickly place them on a plate with it’s sauce and decorate with cut lemon on the side.

  • Don’t burn garlic when roasting. Adjust the heat to get the golden colour.
  • Harder to squash out the garlic if not cooked enough.
  • Make roasted garlic paste as smooth as possible.
  • Always keep it low to medium heat.
  • Use onion instead if you can’t get echalote.
  • If you prefer it oily, add extra olive oil, not butter.
  • Sprinkle less salt. Remember, the butter contains salt.
  • Add salt or pepper if not enough.

  1. Prepare cooked rice.
  2. Put rice and water in a blender.
  3. Blend them together for 1 to 2 minutes.
  4. Pour it in glasses.
  5. Add honey or sugar if you like it sweet. You can add very little salt to taste to have it simple.

2. How to make Rice Milk with Raw Rice

  1. Rinse rice then put it in a yogurt maker and add water. (approx. 40 ℃)
  2. Let it sit for half a day or a day.
  3. When it’s ready, blend it in a blender for 2 minutes.
  4. Use a strainer and filter the liquid.
  5. Add a flavour if you wish.

  • Add any flavour you like. Honey, maple syrup, sugar of your preference, vanilla extract, salt, etc.
  • When straining the liquid, use kitchen paper, coffee filters, or any strainers you have.
  • If straining once isn’t enough for you, do it for few more times.
  • If you are planning to use it as a milk substitute, it’s better to make it thicker. Add less water and adjust as you blend in the blender.
  • You can also as a hot rice milk by heating in a milk pan. (or microwave it if that’s easier for you. I personally don’t like microwaving)

You will need:

  • 1/2 kg Fresh prune plums
  • 1 cup Sugar
  • 1 teaspoon Lemon juice

Instructions:

  1. Wash prune plums very well as we want to use it’s skin for this jam.
  2. Take off the stem, cut the prune plums in half and remove the stone then chop them roughly.
  3. Keep some stones and put them in a cloth cooking bags or something similar.
  4. Place chopped prune plums in a jam pan or a deep pan, and cover it with half amount of sugar and let it sit for awhile until you get juice out of it.
  5. Prepare jars for canning the jam while waiting.
  6. When the sugar is all melted and prune plum juice coming out of it at the bottom of the pan, start heating over medium heat, stir well.
  7. Add the bag of prune plum stones in the same pan.
  8. Turn the heat lower when it starts boiling and discard bubbles around the edge.
  9. It will turn bright red in 5 to 10 minutes. Add the rest of sugar and gently stir then ad lemon juice, cook over very low heat for another 5 to 10 minutes.
  10. Store the jam in boiled clean jars.

  • After washing prune plums, wipe off remaining water with kitchen papers. This will keep your jam clean and will last longer.
  • If you like it sweeter, add sugar.
  • Remember to add the stones because this makes the jam thicken.

  4. Pour the blended soy beans puree in a deep pan and cook over medium heat for about 7 to 10 minutes.
  5. Stir it with wooden spoon while heating.
  6. When it’s cooked, strain the pulp and soy milk using a strainer.

  5. Strain the mixture using strainer.
