You will need

2 tablespoon Espresso
1 cup Water
2 cups Milk of your preference
3 tablespoon Maple syrup (or more if you wish)


  1. Make espresso for 2. Let it cool down in a fridge.
  2. Put maple syrup in glasses first then put ice.
  3. Pour milk.
  4. Gently pour iced espresso.
  5. Cover it with foamed milk. (if you desire)
  6. Decorate with maple syrup.



Use frothed milk if you prefer foamed milk.

If you don’t have espresso machine, use instant espresso powder instead.

6 Grapefruits

70 g Sugar

  1. Cut grapefruits into half.
  2. Squeeze grapefruit with squeezer.
  3. Add fresh grapefruit juice and water into a bowl. 
  4. Peel off the inside of grapefruits. That will  be used as jelly containers. 
  5. Heat water and gelatin powder for 2 minutes.
  6. Turn off the heat and add honey and sugar.
  7. Cool it down and pour it into cupped grapefruit skin.
  8. Put them in a fridge to cool down.
  9. Decorate it with mint.

Tips for making Cherry Blossom Sakura Latte

2. Put cooked rice into a small bowl, add rice vinegar and mix it well.
3. Cut plastic wrap and place it on another small bowl.
4. Place sushi fish first then sushi rice. Wrap it up to create a ball shape.

1. Cut Japanese radish and carrot into fine stripes.
2. Add vegetable and apple vinegar in a bowl and mix it well.

4. Place marinated vegetable mix then sushi rice. Wrap it up to create a ball shape. Try to cover the rice with marinated vegetable.

You will need

3/4 cup milk
1 cup heavy cream
1/4 hot water
5 Hojicha Tea bag
2 egg yolks
3 tablespoons sugar


1. Steep Hojicha tea in boiling water for 1 minute on low heat.
2. Turn off the heat and steam it for 5 minutes.
3. Discard tea bags, add milk then turn on the heat and bring it to boil.
4. While letting it cool down, put egg yolks in a large bowl, lightly whisk egg yolks.
5. Add sugar and mix it very well.
6. Gradually add milk mixture in a bowl.
7. Pour the mixture back in a pan on low heat, stir well.
8. Soak the bottom  of the pan in ice water and cool the mixture. Refrigerate it to cool down.
9. Add heavy cream in the mixture and stir.
10. If you have an ice cream maker, pour the mixture in. If you don’t have one, pour the mixture in a container and put it in the freezer.

2 small plates for soy sauce

1 bowl, 3/4 to 1 cup of Rice
1 sheet of Seaweed paper
2 deep fried Shrimp Tempura
1 teaspoon Sesame
2 green perilla * if possible (lettuce or any green vegetable)
1 teaspoon of Tempura Sauce or, 1/5 teaspoon of salt
1 tablespoon Soy sauce
1/4 teaspoon Wasabi


1. Place a sheet of seaweed paper on top of the bamboo sushi mat.

2. Spread a thin layer of cooked rice over 3/4 of the seaweed leaving about 1 to 2 cm / 1 inch of uncovered seaweed at each end.

3. Arrange green vegetable in the middle with some sesame and put deep fried Shrimp Tempura on top of it.

4. Sprinkle with salt or tempura sauce on Shrimp tempura.

5. Roll up the sushi with bamboo sushi mat,  make sure Shrimp Tempra won’t fall out.

6. Place Shrimp Tempura Roll on a flat cutting board and slice it using a sharp knife.

7. Prepare soy sauce in a small plate with wasabi on side.

Hojicha Tea is roasted Green tea over high heat to bring out its beautiful taste and aroma. It is one of the healthiest Japanese tea that contains tannin and very little caffeine. Hojicha Tea is just like Chinese Oolong tea, it helps fat absorption after having oily meals. Making Hojicha Tea with a Japanese traditional teapot makes a difference in its taste.

2 heaping tablespoon Hojicha Green Tea Leaves

2 cups Hot water, 90 to 100 C / 195 – 212 F

2 tea cups

1 tea pot

1 strainer *if your teapot has none


Steps | Prepare Hojicha Tea

1. Boil the water in a kettle.

2. Warm the teapot with hot water, then empty out the hot water from it.

3. Add Hojicha Green Tea leaves in a teapot.

4. Pour boiling water over the tea leaves and let steep for 15 to 30 seconds.

5. Prepare tea cups and pour tea into it little by little from cup to cup to serve balanced tea.

6. Try to get every drop out of the teapot, the last drop is very condensed with rich flavour.


The water quality is everything, use clear water as possible.

Hojicha Tea is better served with boiling water. You will not get its flavour with warm water.

The longer you let steep, the stronger flavour you get.

Recommended to let steep for 10 to 15 seconds if you like to enjoy its aroma with light taste.

Steeping for 30 seconds makes Hojicha Tea very strong and it will bring its bitter taste out.

Getting every drop possible is the key to make the best cup of Hojicha Tea.

Choosing the best Tuna for Sushi

Must choose Sushi Grade Fish.

Nice red coloured Tuna with few streaks.

Note that if you get a frozen tuna, the best colour of it may appear when the surface starts melting, but loses its colour when its completely unfrozen.

If the edge of tuna fillet is partly melted and has bright red coloured, it is more likely to keep its colour after making sushi.

How to hold knife to cut Sushi Fish

Prepare very sharp knife with a good length of a blade of  21 cm (8 inch) or more.

Without a very tight grip, place the index finger on top of the handle.

Double check the Sushi Fish Size you want

Place the knife on the tuna fillet and the size you see on the left hand side will be the size of Sushi Fish you’ll slice. (3 x 10 cm, 1.2 x 4 inch is recommended)

  1. Place the bottom part of knife on the fillet of tuna.
  2. Slide the knife pulling forward.

Do not push the fillet with your knife.


  • Wipe the cutting board well with kitchen paper before you cut.
  • Cut off the skin of tuna fillet to make it easier to slice.
  • Check the streaks of fillet, place the knife blade almost 90 degree to the streaks. Remember not to cut in aiming right on top of streaks of tuna.
  • Try to use the full length of knife blade from the bottom to the top pulling towards you.
  • Don’t hold the knife too tight, image you are cutting it with your elbo not with your wrist.
  • Tuna meat has many streaks, cutting the streaks is the key to serve tuna with nice texture.

  • Rice should not be too sticky.
